My Grandma Mormors Ginger Cake

Fritid is the Scandinavian concept of free time, one way we love to spend our free time is on a picnic, we make a my grandmothers traditional Ginger Cake recipe and then put on our anoraks and head outdoors - be that the backyard, a park or further afield. We love this tradition and you will fall in love with it too.
My Grandma Mormors Ginger Cake
2 cups of flour
1/2 cup of brown sugar/ coconut sugar 
1 teaspoon baking powder and soda
2 tablespoons of ground ginger (add another 1/2 for an extra ginger kick)
1/2 teaspoon of nutmeg and all spice
1 teaspoon of cinnamon 
1 1/2 cup of agave syrup 
225 g butter
2 eggs
250 ml of milk 
Directions:
Preheat oven to 160
Use a loaf tin
Use one big bowl for all the dry ingredients 
Heat up butter and syrup. Lightly beat the egg and milk
Mix the wet ingredients into the dry ingredients. After mixing pour the batter into your tin.
Cook for 60-70 minutes or until golden on top.

Serve with a big dash of your favourite butter or try the Nordic favourite of melted blue cheese.
